A refined blend of old-vine Airén, a true Spanish variety, and Sauvignon Blanc, grown in select dryland vineyards using traditional methods. With yields controlled to just 500 grams per vine, this wine achieves exceptional concentration and aromatic complexity. Hand-harvested in the cool morning hours to preserve freshness, the grapes undergo gentle pressing and meticulous temperature control, allowing indigenous yeasts to enhance their full aromatic potential. A final touch of fine lees aging adds depth and texture, resulting in a beautifully expressive and well-balanced wine.
